Burrata Cherry Tomato Salad

As we unofficially say goodbye to summer, let’s end on a delicious note. Today I made this summertime salad with some items from the garden and fridge. Chicken is optional if you want to create a more substantial salad. It’s simple and easy, try it and let me know how it turned out.

Tomato Burrata Salad with Chicken

Ingredients:

5oz chicken breast (Optional)
2 cups cherry tomatoes (halved)
1/4 cup roasted garlic
3oz Burrata, cubed
1 tbsp extra virgin olive oil
1/2 tbsp reduced balsamic
6 leaves of basil torn

Procedure:

Wash and half cherry tomatoes and put into medium bowl.  Add chicken, garlic, Burrata, olive oil, and torn basil.

Finish with balsamic and serve.
