What You Need
2 cups cooked turkey, shredded or chopped
1 cup dried lentils (any variety works)
1 onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
6 cups chicken or turkey stock
1 tsp thyme
1 tsp smoked paprika (optional but excellent)
Salt & pepper to taste

What You Do
Warm a splash of olive oil in a large pot. Add the onion, carrots, and celery, and sauté until softened and fragrant.
Add the garlic, thyme, and smoked paprika. Stir for about 30 seconds until everything blooms.
Add the lentils and stock. Bring to a simmer and cook 20–25 minutes, or until the lentils are tender.
Stir in the leftover turkey and let it heat through.
Season to taste and serve steaming hot.
