Risotto Made Easy: My Top Tips & Tricks

Risotto is one of my favorite dishes to make, especially for dinner parties! It's rich, creamy, incredibly versatile and easier to prepare than you might think.

And here's a fun fact: risotto isn't actually a type of rice. It's a cooking method!

This traditional Italian dish is made by gradually adding broth to rice, allowing the grains to release starch and create that signature creamy texture. My favorite rice to use is Arborio, a short-grain variety from northern Italy that's perfect for risotto.

Did You Know? Fun Facts About Risotto

  • It's all about the technique! Risotto refers to the cooking method, not the rice itself. Arborio, Carnaroli and Vialone Nano are popular varieties.

  • No cream needed! That delicious, creamy consistency comes naturally from the starch in the rice.

  • Don't rinse your rice! You want to keep that starch to achieve the perfect texture.

  • It's a northern Italian specialty! Risotto has deep roots in regions like Lombardy and Piedmont.

My Tips for Perfect Risotto

Toast your rice first. Briefly cooking the grains in olive oil or butter before adding broth helps develop flavor.

Keep your broth warm. Add warm stock a little at a time, allowing the rice to absorb the liquid as it cooks.

Stir, but not constantly. Stirring helps release starch and prevent sticking, but there's no need to overdo it.

Don't overcook it. Risotto should be creamy and slightly loose, with rice that's tender but still has a little bite.

Finish with butter and Parmesan. A little of each at the end adds richness and a beautiful, silky texture.

My Dinner Party Secret: Par-Cook Your Risotto!

Here's a trick I love sharing: you don't have to make risotto from start to finish while your guests are waiting!

You can par-cook it, meaning partially cook it ahead of time, then finish it right before serving.

Simply cook the rice until it's about 70–75% done, spread it onto a sheet pan to cool quickly and refrigerate. When you're ready to eat, return it to the pan, add warm broth and finish cooking until perfectly creamy.

It's a technique we use in professional kitchens, and it's a game changer for entertaining at home!

Get Creative!

Once you've mastered the basics, the possibilities are endless! Try mushrooms and Parmesan, asparagus and lemon, roasted butternut squash and sage, or shrimp and scallops.

Serve risotto as a main course or alongside steak, chicken or fish.

Great cooking doesn't have to be complicated. It's about understanding the ingredients, mastering a few simple techniques and having fun in the kitchen.

And with my par-cooking trick, you can spend less time at the stove and more time enjoying your guests. That's what entertaining should be all about!
