Apple Cider Honey Dijon Vinaigrette
Yield: About 1 cup (8 servings)
Ingredients
½ cup apple cider vinegar (preferably unfiltered)
2 tablespoons Dijon mustard
2 tablespoons raw honey
¾ cup extra virgin olive oil
1 small shallot, finely minced
1 teaspoon fresh thyme leaves, chopped (or ½ teaspoon dried thyme)
1 teaspoon fresh lemon juice
½ teaspoon kosher salt
¼ teaspoon freshly cracked black pepper
Optional: 1–2 tablespoons fresh apple cider for a softer, seasonal sweetness
Instructions
1. Build the Base
In a medium mixing bowl, whisk together the apple cider vinegar, Dijon mustard, honey, and fresh lemon juice until smooth and slightly thickened.
2. Layer the Flavor
Add the minced shallot, thyme, kosher salt, and black pepper. Allow the mixture to rest for 2 to 3 minutes, giving the shallot time to mellow and release its flavor.
3. Emulsify
While whisking continuously, slowly drizzle in the olive oil. Continue whisking until the vinaigrette becomes fully emulsified, glossy, and creamy.
4. Adjust and Finish
Taste and adjust to your preference. Add a little more honey for sweetness, extra vinegar for brightness, or a splash of fresh apple cider for a softer, orchard-inspired finish.
