Recipe: Crudo

Today I’m serving up a unique way to enjoy fish: Crudo. 🐟🌿🌶️

If you’re not familiar with it, crudo is an Italian-style dish that simply means “raw.” It’s all about letting really great fish speak for itself. Thin slices of ultra-fresh fish are finished with chive oil, citrus, flaky salt, and a few simple toppings that bring out the natural flavor. I like to layer in blood orange for a little sweetness and brightness, and add a touch of chili crisp for heat that really wakes up the dish.

I loved using this tilapia from @roothouseaqua. It’s incredibly fresh, hearty, and way more flavorful than what most people think of when they hear “tilapia.”
